We had a BIG sleep in then decided to make vege muffins for brunch.

They were fresh out of the oven smack on World Cup time which made the "eating at the table" rule a bit of a dilemma.  Both the muffins and the game were awesome.

PS.  Thanks Diana for the inspiration!  We used brown rice flour in the end.  They were intended to be for Rafa’s lunches this week but there’s only one left.  Whoops!

      About a cup and a half of cooked veges, add a couple of eggs, maybe 5 heaped tablespoons of a flour of your choice (we used brown rice flour), about a cup of milk, salt, pepper and whatever spice or herb you want for a bit of flavour. Mix it up and whack it in a hot oven. Too easy.
